Ingredients:
- 2 cups (250g) all-purpose flour
- 3/4 cup (150g) granulated sugar
- 2 tsp (10g) baking powder
- 1/2 tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- 1/2 cup (115g) unsalted butter, melted and cooled
- 2 large (100g) eggs, room temperature
- 1/2 cup (120ml) whole milk
- 1 tsp (5ml) pure vanilla extract
- 2 cups (300g) fresh peaches, peeled and diced
- 1 tbsp (8g) all-purpose flour
- 2 tbsp (16g) granulated sugar
- 1/2 tsp (1g) ground cinnamon
Instructions:
- Chop the peaches into uniform 1/4-inch pieces.
- In a small bowl, toss the diced peaches with 1 tablespoon of flour until lightly coated and set aside.
- In a large mixing bowl, whisk together 2 cups of flour, 3/4 cup sugar, baking powder, salt, and 1 teaspoon of cinnamon until no lumps remain.
- In a medium bowl, beat the eggs, then stir in the melted butter, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Using a spatula, stir gently until the flour streaks just disappear; do not over-mix.
- Gently fold in the flour-coated peaches until evenly distributed.
- Divide the batter evenly among 12 lined muffin cups.
- Mix the remaining 2 tablespoons of sugar and 1/2 teaspoon of cinnamon together and sprinkle evenly over the tops of the muffins.
- Bake according to oven instructions, then allow to cool on a wire rack.
