Ingredients:
- 2 cups (250g) whole wheat pastry flour
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- 3/4 cup (170g) plain Greek yogurt
- 1/2 cup (110ml) maple syrup
- 1 large (50g) egg
- 1/4 cup (60ml) melted coconut oil
- 1 tsp (5ml) pure vanilla extract
- 1 cup (150g) fresh blueberries
- 1 cup (160g) diced ripe peaches
- 1 tbsp (8g) flour
- 1/4 cup (30g) rolled oats
- 2 tbsp (15g) coconut sugar
- 1 tbsp (15g) cold coconut oil
Instructions:
- Preheat your oven to 400°F (200°C). Line your muffin tin with liners or grease with oil.
- In a small bowl, toss the blueberries and diced peaches in 1 tbsp of flour until lightly coated to prevent sinking.
- Combine the oats, coconut sugar, and cold oil for the streusel in a separate ramekin, mixing with a fork until crumbly.
- In a large bowl, whisk together the flour, baking powder, salt, and cinnamon until no clumps remain.
- Create a well in the center and pour in the Greek yogurt, maple syrup, egg, oil, and vanilla.
- Stir gently with a spatula until just combined; stop the moment the flour streaks disappear.
- Gently fold in the floured blueberry and peach mixture using a figure-eight motion.
- Divide the batter evenly among the 12 muffin cups.
- Top each muffin with a generous pinch of the oat streusel.
- Bake for 18–22 minutes until the tops are mahogany-colored and a toothpick inserted into the center comes out clean.
