Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 1/3 cup (65g) coconut sugar
  • 1/4 cup (60ml) unsweetened apple puree
  • 1 large egg
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (190g) whole wheat pastry flour
  • 1/2 tsp (2g) baking soda
  • 1 tsp (2g) ground cinnamon
  • 1/4 tsp (1g) ground nutmeg
  • 1/4 tsp (1.5g) sea salt
  • 1/2 cup (60g) dried apple bits, finely chopped
  • 3 tbsp (45ml) reduced-sugar salted caramel sauce
  • 1 pinch (0.5g) flaky sea salt

Instructions:

  1. Cream together the softened butter and coconut sugar until pale and fluffy.
  2. Beat in the apple puree, egg, and vanilla extract until the mixture is smooth and emulsified.
  3. Sift the flour, baking soda, cinnamon, nutmeg, and salt directly into the wet ingredients.
  4. Stir by hand until just combined, then fold in the chopped dried apple bits until evenly distributed.
  5. Scoop 2 tablespoons of dough and press a small indentation in the center.
  6. Spoon 1/2 teaspoon of salted caramel into the middle and pinch the dough closed to seal.
  7. Bake at 350°F (175°C) for 10 minutes or until the edges are mahogany-colored and the centers are set.
  8. Sprinkle with flaky salt immediately upon removal from the oven.
