Ingredients:

  • 10 large eggs
  • 1 cup low-fat cottage cheese
  • 1/2 cup skim milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1.5 cups shredded sharp cheddar cheese
  • 2 cups fresh baby spinach, chopped
  • 1 cup diced red bell pepper

Instructions:

  1. Place the eggs, cottage cheese, milk, salt, pepper, and garlic powder into a blender. Process on high for 30–60 seconds until the mixture is completely smooth and slightly frothy.
  2. Pour the blended mixture into a large bowl. Gently fold in the chopped spinach, diced red peppers, and 1 cup of the shredded cheddar cheese using a spatula until evenly distributed.
  3. Pour the batter into a greased 9x13 inch baking dish. Sprinkle the remaining 1/2 cup of cheddar cheese evenly over the top.
  4. Bake at 350°F (175°C) for 30–35 minutes, or until the center is set and the edges are mahogany-colored gold.
