Ingredients:

  • 1 lb lean ground turkey sausage
  • 1 cup diced green bell pepper
  • 1/2 cup diced yellow onion
  • 8 large eggs
  • 1 cup skim milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1 can (16 oz) refrigerated flaky biscuits
  • 1 1/2 cups shredded reduced-fat sharp cheddar cheese

Instructions:

  1. Brown the turkey sausage in a skillet over medium-high heat. Add the diced onions and peppers, sautéing until the meat is mahogany-colored and the vegetables are softened. Drain any excess liquid.
  2. In a large bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until the mixture is velvety and no streaks of egg white remain.
  3. Spread the cooked sausage mixture evenly across the bottom of a greased 9x13 inch baking dish. Pour the egg custard over the meat, ensuring it fills the gaps.
  4. Quarter the canned biscuits into small pieces and nestle them into the egg mixture. Sprinkle the shredded cheese evenly across the top.
  5. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes until the eggs are set and the biscuit tops are golden-brown.
