- 1 cup diced green bell pepper
- 1/2 cup diced yellow onion
- 8 large eggs
- 1 cup skim milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1 can (16 oz) refrigerated flaky biscuits
- 1 1/2 cups shredded reduced-fat sharp cheddar cheese
Instructions:
- Brown the turkey sausage in a skillet over medium-high heat. Add the diced onions and peppers, sautéing until the meat is mahogany-colored and the vegetables are softened. Drain any excess liquid.
- In a large bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until the mixture is velvety and no streaks of egg white remain.
- Spread the cooked sausage mixture evenly across the bottom of a greased 9x13 inch baking dish. Pour the egg custard over the meat, ensuring it fills the gaps.
- Quarter the canned biscuits into small pieces and nestle them into the egg mixture. Sprinkle the shredded cheese evenly across the top.
- Bake in a preheated oven at 350°F (175°C) for 25-30 minutes until the eggs are set and the biscuit tops are golden-brown.
