Ingredients:

  • 1 lb ground breakfast sausage
  • 1 cup diced yellow onion
  • 1 bell pepper, diced
  • 2 cups shredded sharp cheddar cheese
  • 12 large eggs
  • 2 cups whole milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 6 cups cubed sourdough or French bread

Instructions:

  1. Brown the ground sausage in a skillet over medium-high heat until mahogany-colored and cooked through.
  2. Add the diced onions and bell peppers to the skillet, sautéing until the vegetables are tender and fragrant.
  3. Drain the excess fat from the sausage and vegetable mixture.
  4. Preheat the oven to 350°F (180°C) and grease a 9x13 inch baking dish.
  5. Spread the bread cubes evenly across the bottom of the baking dish.
  6. Layer the cooked sausage and vegetable mixture over the bread, then sprinkle the shredded cheddar cheese evenly across the top.
  7. In a large bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until the mixture is smooth and uniform.
  8. Pour the egg custard slowly over the filling, ensuring it seeps into all the crevices.
  9. Bake for 50-60 minutes until the center is set and the top is golden brown.
  10. Let the casserole rest for 10 minutes before slicing to allow the custard to firm up.
