Ingredients:
- 10 large eggs
- 1/4 cup whole milk
- 1 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1 lb lean ground turkey sausage, cooked and crumbled
- 2 cups fresh spinach, chopped
- 1 medium red bell pepper, finely diced
- 1 cup shredded sharp cheddar cheese
Instructions:
- Preheat the oven to 350°F (175°C) and generously grease a 12-cup standard muffin tin with melted butter.
- Sauté diced red bell pepper and cooked turkey sausage in a skillet over medium heat until the peppers are soft. Stir in chopped spinach and cook for 1-2 minutes until wilted, then remove from heat and drain any excess liquid.
- In a large mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder gently until combined, avoiding excessive froth.
- Divide the sautéed sausage and vegetable mixture evenly among the 12 greased muffin cups.
- Sprinkle one tablespoon of shredded cheddar cheese into the bottom of each cup, then pour the egg mixture over the fillings until each cup is 3/4 full.
- Top each muffin with the remaining shredded cheese.
- Bake for 20-25 minutes, or until the centers are set and the tops are lightly golden.
