Ingredients:

  • 10 large eggs
  • 1/4 cup whole milk
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 lb lean ground turkey sausage, cooked and crumbled
  • 2 cups fresh spinach, chopped
  • 1 medium red bell pepper, finely diced
  • 1 cup shredded sharp cheddar cheese

Instructions:

  1. Preheat the oven to 350°F (175°C) and generously grease a 12-cup standard muffin tin with melted butter.
  2. Sauté diced red bell pepper and cooked turkey sausage in a skillet over medium heat until the peppers are soft. Stir in chopped spinach and cook for 1-2 minutes until wilted, then remove from heat and drain any excess liquid.
  3. In a large mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder gently until combined, avoiding excessive froth.
  4. Divide the sautéed sausage and vegetable mixture evenly among the 12 greased muffin cups.
  5. Sprinkle one tablespoon of shredded cheddar cheese into the bottom of each cup, then pour the egg mixture over the fillings until each cup is 3/4 full.
  6. Top each muffin with the remaining shredded cheese.
  7. Bake for 20-25 minutes, or until the centers are set and the tops are lightly golden.
