Ingredients:
- 6 cups (900g) fresh peaches, peeled and sliced
- 1/4 cup (50g) brown sugar, packed
- 1 tbsp (8g) tapioca flour
- 1 tsp (2g) ground cinnamon
- 1 tbsp (15ml) lemon juice
- 1/2 tsp (1g) salt
- 1 cup (90g) almond flour
- 1 cup (90g) certified gluten-free rolled oats
- 1/2 cup (100g) brown sugar
- 1/2 tsp (1g) ground cinnamon
- 1/4 tsp (1g) salt
- 1/2 cup (113g) unsalted butter, chilled and cubed
Instructions:
- Preheat the oven to 375°F (190°C) and lightly grease a 9x9 inch baking dish or line it with parchment paper.
- In a large mixing bowl, combine sliced peaches, 50g brown sugar, tapioca flour, 2g cinnamon, lemon juice, and 1g salt. Stir gently until coated.
- Pour the peach mixture into the prepared baking dish and spread into an even layer.
- In a medium bowl, whisk together almond flour, GF rolled oats, 100g brown sugar, 1g cinnamon, and 1g salt.
- Add chilled, cubed butter to the dry ingredients and use a pastry cutter or fingertips to rub the butter in until the mixture resembles coarse crumbs with pea-sized lumps.
- Sprinkle the crumble evenly over the peach filling without pressing it down.
- Bake for 30 minutes or until the topping is golden brown and the peach filling is bubbling.
