Ingredients:

  • 6 cups (900g) fresh peaches, peeled and sliced
  • 1/4 cup (50g) brown sugar, packed
  • 1 tbsp (8g) tapioca flour
  • 1 tsp (2g) ground cinnamon
  • 1 tbsp (15ml) lemon juice
  • 1/2 tsp (1g) salt
  • 1 cup (90g) almond flour
  • 1 cup (90g) certified gluten-free rolled oats
  • 1/2 cup (100g) brown sugar
  • 1/2 tsp (1g) ground cinnamon
  • 1/4 tsp (1g) salt
  • 1/2 cup (113g) unsalted butter, chilled and cubed

Instructions:

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9x9 inch baking dish or line it with parchment paper.
  2. In a large mixing bowl, combine sliced peaches, 50g brown sugar, tapioca flour, 2g cinnamon, lemon juice, and 1g salt. Stir gently until coated.
  3. Pour the peach mixture into the prepared baking dish and spread into an even layer.
  4. In a medium bowl, whisk together almond flour, GF rolled oats, 100g brown sugar, 1g cinnamon, and 1g salt.
  5. Add chilled, cubed butter to the dry ingredients and use a pastry cutter or fingertips to rub the butter in until the mixture resembles coarse crumbs with pea-sized lumps.
  6. Sprinkle the crumble evenly over the peach filling without pressing it down.
  7. Bake for 30 minutes or until the topping is golden brown and the peach filling is bubbling.
