Ingredients:

  • 8 large eggs
  • 1 cup low-fat cottage cheese
  • 1/2 cup unsweetened almond milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups fresh baby spinach, roughly chopped
  • 1 medium red bell pepper, diced
  • 1/2 cup yellow onion, finely diced
  • 6 oz lean turkey sausage, cooked and crumbled
  • 1 tbsp olive oil
  • 1 cup shredded sharp cheddar cheese
  • 1/2 tsp smoked paprika

Instructions:

  1. Heat olive oil in a skillet over medium heat. Add the diced onions and bell peppers, cooking until the onions become translucent and the peppers soften. Stir in the chopped spinach and cook just until wilted. Remove from heat and set aside.
  2. Place the eggs, cottage cheese, milk, salt, and pepper into a blender. Process on high for 30 seconds until the mixture is completely smooth and pale yellow.
  3. Grease a 9x13 inch baking dish. Spread the sautéed vegetables and cooked turkey sausage evenly across the bottom.
  4. Pour the blended egg mixture over the top, smoothing it with a spatula. Sprinkle the shredded cheddar cheese and smoked paprika evenly across the surface.
  5. Bake at 375°F (190°C) for 25-30 minutes, or until the center is set and the edges are golden-brown.
