Ingredients:
- 1.5 cups (190g) all-purpose flour
- 1 cup (200g) granulated sugar
- 2 tsp (10g) baking powder
- 0.5 tsp (3g) salt
- 0.5 cup (115g) unsalted butter, softened
- 2 large eggs, room temperature
- 1 tsp (5ml) vanilla extract
- 0.5 cup (120ml) whole milk
- 2 cups (300g) fresh peaches, peeled and diced
- 0.75 cup (95g) all-purpose flour
- 0.5 cup (100g) light brown sugar, packed
- 1 tsp (2g) ground cinnamon
- 6 tbsp (85g) unsalted butter, cold and cubed
- 0.5 cup (60g) powdered sugar
- 1 tbsp (15ml) milk
- 0.25 tsp (1ml) vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan and line it with parchment paper, leaving an overhang on the sides.
- Dice the peaches into 1/2 inch pieces. Toss them in a small bowl with a pinch of flour to prevent them from sinking in the batter.
- In a large bowl, beat the softened butter and granulated sugar together until the mixture is pale and fluffy. Add eggs one at a time, then stir in the vanilla extract.
- Whisk together the 1.5 cups of flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Stir until just combined.
- Gently fold the diced peaches into the batter using a spatula.
- In a separate bowl, mix the 0.75 cup of flour, brown sugar, and cinnamon. Use a pastry cutter or forks to cut in the cold cubed butter until clumps form.
- Pour the batter into the prepared pan and sprinkle the cinnamon crumble evenly over the top.
- Bake for 55 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Allow the cake to cool. For the optional glaze, whisk together powdered sugar, milk, and vanilla extract, then drizzle over the cooled cake.
