Ingredients:

  • 2 cups (180g) old fashioned rolled oats
  • 1 tsp (5g) baking powder
  • 1 tsp (2g) ground cinnamon
  • 1/2 tsp (3g) salt
  • 1 cup (240ml) milk
  • 1 large egg
  • 2 tbsp (30ml) maple syrup
  • 1 tsp (5ml) vanilla extract
  • 2 cups (300g) fresh peaches, diced
  • 1 tbsp (15g) brown sugar
  • 1/2 tsp (1g) ground ginger

Instructions:

  1. Preheat the oven to 350°F (175°C). In a small bowl, toss the diced peaches with brown sugar and ground ginger until the fruit is coated and glossy. Set aside.
  2. In a large mixing bowl, whisk together the rolled oats, baking powder, cinnamon, and salt. Stir in the milk, egg, maple syrup, and vanilla extract until combined and the batter is thick but pourable.
  3. Pour the oat mixture into a greased 8x8 inch baking dish. Gently press the seasoned peaches into the top of the batter, ensuring they are evenly distributed.
  4. Bake for 40–45 minutes until the edges are deep mahogany-brown and the center is set with a slight spring.
  5. Remove from the oven and let the bake cool for 5–10 minutes to allow the juices to settle before slicing.
