Ingredients:

  • 1.5 cups whole-wheat pastry flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 1 tsp ground cinnamon
  • 0.25 tsp sea salt
  • 2 large eggs
  • 0.5 cup pure maple syrup
  • 0.5 cup plain Greek yogurt
  • 0.33 cup melted coconut oil
  • 1 tsp vanilla extract
  • 2 cups fresh peaches, peeled and diced
  • 1 tbsp lemon juice
  • 0.5 cup rolled oats
  • 0.25 cup almond flour
  • 2 tbsp maple syrup
  • 2 tbsp melted coconut oil
  • 0.5 tsp cinnamon

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch square pan or line with parchment paper. Toss diced peaches with lemon juice in a small bowl and set aside.
  2. Whisk together pastry flour, baking powder, baking soda, cinnamon, and salt in a medium bowl. In a separate larger bowl, beat eggs, maple syrup, Greek yogurt, melted coconut oil, and vanilla until smooth. Gently fold the dry ingredients into the wet mixture until just combined, then fold in the peaches.
  3. Pour batter into the prepared pan. Mix streusel ingredients (oats, almond flour, maple syrup, coconut oil, and cinnamon) in a small bowl until crumbly and sprinkle evenly over the top. Bake for 40–45 minutes until a toothpick inserted in the center comes out clean.
