Ingredients:
- 3 cups (450g) fresh peaches, diced
- 3 tbsp (42g) unsalted butter
- 1/4 cup (50g) light brown sugar, packed
- 1/2 tsp (1g) ground cinnamon
- 1 tsp (5ml) lemon juice
- 4 large eggs
- 1 cup (240ml) whole milk
- 1/2 cup (120ml) heavy cream
- 1 tbsp (15ml) vanilla extract
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (0.5g) ground nutmeg
- 1/4 tsp (1.5g) salt
- 1 lb (450g) brioche or challah bread, cut into 1-inch cubes
- 4 tbsp (56g) unsalted butter, melted
- 2 tbsp (25g) granulated sugar
Instructions:
- Melt 3 tbsp of butter in a skillet over medium heat. Stir in the diced peaches and brown sugar. Cook for 5–7 minutes until the peaches are tender and the sauce has thickened into a syrupy glaze.
- Stir in the cinnamon and lemon juice, then remove from heat and let cool slightly.
- Grease a 9x13 inch baking dish with melted butter.
- Place half of the bread cubes in the dish, followed by half of the caramelized peaches. Top with the remaining bread and the rest of the peaches.
- In a bowl, whisk together the eggs, milk, cream, vanilla, cinnamon, nutmeg, and salt.
- Pour the custard evenly over the bread, pressing down gently with a spatula to ensure every piece is submerged.
- Cover with foil and refrigerate for at least 8 hours or overnight.
- Preheat oven to 350°F (175°C). Remove the bake from the fridge and let it sit for 15 minutes.
- Sprinkle the top with granulated sugar.
- Bake uncovered for 50 minutes until golden brown and set.
