Ingredients:
- 2 cups (300g) fresh peaches, diced
- 1 tbsp (12g) light brown sugar
- 1 tbsp (14g) unsalted butter
- 1/4 tsp (1g) ground cinnamon
- 1 tsp (5ml) fresh lemon juice
- 1 cup (90g) Old Fashioned Rolled Oats
- 2 cups (480ml) unsweetened almond milk
- 1/4 tsp (1.5g) fine sea salt
- 1/2 tsp (1g) vanilla extract
Instructions:
- Place the butter in the saucepan over medium heat. Once bubbling, add the diced peaches and brown sugar.
- Stir constantly for 3–5 minutes until the peaches soften and a mahogany-colored syrup forms. Stir in the cinnamon and lemon juice, then remove the peach mixture from the pan and set aside on a plate.
- In the same pan, add the rolled oats, milk, and salt. Bring to a gentle simmer over medium heat.
- Reduce heat to low and cook, stirring occasionally, for 7–10 minutes until the liquid is mostly absorbed and the texture is creamy.
- Stir the vanilla extract into the oats. Gently fold the caramelized peaches and their remaining syrup back into the saucepan.
- Heat through for 60 seconds until the oatmeal is streaked with gold.
