Ingredients:

  • 6 cups (450g) cubed sourdough or whole-grain bread
  • 2 cups (300g) sliced fresh peaches
  • 4 large eggs
  • 2 cups (480ml) 2% milk
  • 1/4 cup (60ml) maple syrup
  • 1 tsp (5g) ground cinnamon
  • 1 tsp (5ml) vanilla extract
  • 1/4 tsp (1.5g) salt
  • 1/2 cup (50g) rolled oats
  • 1/2 cup (60g) almond flour
  • 2 tbsp (28g) melted coconut oil
  • 1 tbsp (12g) brown sugar
  • 1/2 tsp (2.5g) cinnamon

Instructions:

  1. Grease a 9x13 inch baking dish or line it with parchment paper.
  2. Place half of the bread cubes in the bottom of the dish, top with half of the sliced peaches, and repeat for a second layer.
  3. In a large bowl, whisk together eggs, milk, maple syrup, cinnamon, vanilla, and salt until smooth.
  4. Pour the custard evenly over the bread and peaches, pressing down lightly with a spatula to ensure bread is submerged.
  5. Cover with foil and refrigerate for at least 6 hours or overnight.
  6. Preheat oven to 350°F (175°C). In a small bowl, combine oats, almond flour, melted coconut oil, brown sugar, and cinnamon until the mixture looks like wet sand.
  7. Sprinkle the crumble evenly over the soaked casserole.
  8. Bake for 40–45 minutes until the edges are bubbling and the top is a deep mahogany brown.
