Ingredients:
- 6 cups (450g) cubed sourdough or whole-grain bread
- 2 cups (300g) sliced fresh peaches
- 4 large eggs
- 2 cups (480ml) 2% milk
- 1/4 cup (60ml) maple syrup
- 1 tsp (5g) ground cinnamon
- 1 tsp (5ml) vanilla extract
- 1/4 tsp (1.5g) salt
- 1/2 cup (50g) rolled oats
- 1/2 cup (60g) almond flour
- 2 tbsp (28g) melted coconut oil
- 1 tbsp (12g) brown sugar
- 1/2 tsp (2.5g) cinnamon
Instructions:
- Grease a 9x13 inch baking dish or line it with parchment paper.
- Place half of the bread cubes in the bottom of the dish, top with half of the sliced peaches, and repeat for a second layer.
- In a large bowl, whisk together eggs, milk, maple syrup, cinnamon, vanilla, and salt until smooth.
- Pour the custard evenly over the bread and peaches, pressing down lightly with a spatula to ensure bread is submerged.
- Cover with foil and refrigerate for at least 6 hours or overnight.
- Preheat oven to 350°F (175°C). In a small bowl, combine oats, almond flour, melted coconut oil, brown sugar, and cinnamon until the mixture looks like wet sand.
- Sprinkle the crumble evenly over the soaked casserole.
- Bake for 40–45 minutes until the edges are bubbling and the top is a deep mahogany brown.
