Ingredients:

  • 2 cups (300g) fresh peaches, peeled and finely diced
  • 1 tbsp (15ml) fresh lemon juice
  • 1 cup (240ml) pure grade A maple syrup
  • 1/4 cup (50g) light brown sugar, packed
  • 1/2 tsp (2.5ml) vanilla extract
  • 1/4 tsp (1g) ground cinnamon

Instructions:

  1. Combine the finely diced peaches and lemon juice in a medium heavy-bottomed saucepan. Stir well and let them sit for 5 minutes to allow the acidity to break down the peach fibers.
  2. Add the maple syrup, brown sugar, and cinnamon to the pot.
  3. Place the saucepan over medium heat until the mixture reaches a gentle simmer.
  4. Reduce heat to low and cook for 20–25 minutes, stirring occasionally, until the peaches become translucent and the liquid reduces by about one-third.
  5. Remove the pan from the heat and stir in the vanilla extract.
  6. For a velvety finish, pulse the mixture with an immersion blender or press the syrup through a fine-mesh strainer or cheesecloth.
