Ingredients:
- 2 cups (300g) fresh peaches, peeled and finely diced
- 1 tbsp (15ml) fresh lemon juice
- 1 cup (240ml) pure grade A maple syrup
- 1/4 cup (50g) light brown sugar, packed
- 1/2 tsp (2.5ml) vanilla extract
- 1/4 tsp (1g) ground cinnamon
Instructions:
- Combine the finely diced peaches and lemon juice in a medium heavy-bottomed saucepan. Stir well and let them sit for 5 minutes to allow the acidity to break down the peach fibers.
- Add the maple syrup, brown sugar, and cinnamon to the pot.
- Place the saucepan over medium heat until the mixture reaches a gentle simmer.
- Reduce heat to low and cook for 20–25 minutes, stirring occasionally, until the peaches become translucent and the liquid reduces by about one-third.
- Remove the pan from the heat and stir in the vanilla extract.
- For a velvety finish, pulse the mixture with an immersion blender or press the syrup through a fine-mesh strainer or cheesecloth.
