Ingredients:
- 1/2 cup (60g) all-purpose flour
- 1/2 cup (100g) brown sugar, packed
- 1 tsp (2g) ground cinnamon
- 1/4 cup (57g) cold unsalted butter, cubed
- 2 cups (250g) all-purpose flour
- 3/4 cup (150g) granulated sugar
- 2 tsp (8g) baking powder
- 1/2 tsp (3g) baking soda
- 1/2 tsp (3g) salt
- 1 cup (240ml) whole milk
- 1/3 cup (75ml) vegetable oil
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- 1 tbsp (15ml) lemon juice
- 1 1/2 cups (225g) diced peaches
Instructions:
- In a small bowl, combine 1/2 cup flour, brown sugar, and cinnamon. Rub the cold cubed butter into the mixture using fingertips or a fork until it resembles coarse sand with a few pea-sized lumps. Set aside.
- In a large bowl, whisk together the remaining flour, granulated sugar, baking powder, baking soda, and salt.
- In a medium bowl, beat the egg, then whisk in the milk, oil, vanilla, and lemon juice.
- Pour the wet ingredients into the dry ingredients and fold together with a spatula until just combined; the batter should remain slightly lumpy.
- Gently fold the diced peaches into the batter.
- Spoon the batter into a 12-cup standard muffin tin, filling each cup about 3/4 full.
- Generously sprinkle the cinnamon streusel topping over each muffin, pressing lightly.
- Bake at 400°F (200°C) for 15–18 minutes until the tops are mahogany-colored and a toothpick comes out clean.
- Let the muffins cool in the pan for 5 minutes before transferring them to a wire cooling rack.
