Ingredients:
- 2 cups (180g) old-fashioned rolled oats
- 1 tsp (5g) baking powder
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1.5g) salt
- 2 cups (480ml) whole milk
- 1 large (50g) egg, beaten
- 2 tbsp (30ml) pure maple syrup
- 1 tsp (5ml) vanilla extract
- 2 cups (300g) diced peaches
- 1 tbsp (15g) melted coconut oil
- 1/2 cup (60g) chopped pecans (optional)
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking dish with coconut oil or line it with parchment paper.
- In a large mixing bowl, whisk together the rolled oats, baking powder, cinnamon, and salt.
- Pour in the milk, beaten egg, maple syrup, and vanilla extract. Stir until combined into a thick, wet porridge consistency.
- Pour the oat mixture into the prepared baking dish and spread it evenly.
- Gently press the diced peaches into the top of the batter.
- Drizzle melted coconut oil over the fruit and sprinkle with chopped pecans if using.
- Bake for 35-40 minutes until the edges are firm and the top is mahogany-gold, and the center is set.
