Ingredients:

  • 2 cups (180g) old-fashioned rolled oats
  • 1 tsp (5g) baking powder
  • 1 tsp (2g) ground cinnamon
  • 1/4 tsp (1.5g) salt
  • 2 cups (480ml) whole milk
  • 1 large (50g) egg, beaten
  • 2 tbsp (30ml) pure maple syrup
  • 1 tsp (5ml) vanilla extract
  • 2 cups (300g) diced peaches
  • 1 tbsp (15g) melted coconut oil
  • 1/2 cup (60g) chopped pecans (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking dish with coconut oil or line it with parchment paper.
  2. In a large mixing bowl, whisk together the rolled oats, baking powder, cinnamon, and salt.
  3. Pour in the milk, beaten egg, maple syrup, and vanilla extract. Stir until combined into a thick, wet porridge consistency.
  4. Pour the oat mixture into the prepared baking dish and spread it evenly.
  5. Gently press the diced peaches into the top of the batter.
  6. Drizzle melted coconut oil over the fruit and sprinkle with chopped pecans if using.
  7. Bake for 35-40 minutes until the edges are firm and the top is mahogany-gold, and the center is set.
