Ingredients:
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 2 large eggs, room temperature
- 1 tablespoon vanilla extract
- 2 tablespoons plain Greek yogurt
- 2/3 cup unsweetened cocoa powder, sifted
- 1/2 cup all-purpose flour
- 1/2 teaspoon fine sea salt
- 1/4 cup dark chocolate chips (70% cacao)
Instructions:
- Preheat your oven to 350°F (175°C). Line an 8x8 inch square baking pan with parchment paper, leaving an overhang on two sides for easy removal.
- In a large microwave-safe mixing bowl, combine the melted butter and granulated sugar. Whisk vigorously for 1-2 minutes until well combined.
- Add the eggs, vanilla extract, and Greek yogurt to the butter mixture. Continue to whisk until the batter is pale and slightly frothy, which helps create the crackle top.
- Sift the cocoa powder, all-purpose flour, and sea salt directly into the wet ingredients.
- Using a silicone spatula, gently fold the dry ingredients into the wet mixture and fold in the chocolate chips. Stop as soon as no white streaks remain to avoid over-mixing.
- Pour the batter into the prepared pan and smooth the top. Bake for 25 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
- Remove from the oven and allow the brownies to cool completely in the pan for at least 1 hour to let the fudge texture set before slicing.
