Ingredients:

  • 4 cups fresh peaches, peeled and sliced
  • 1/2 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup whole milk
  • 1/2 cup unsalted butter, melted

Instructions:

  1. Blanch peaches in boiling water for 30 seconds, peel, and slice into 1/2 inch wedges. Toss slices with 1/2 cup sugar, lemon juice, cinnamon, and 1/4 tsp salt; let sit for 10 minutes.
  2. Preheat oven to 350°F (175°C). Pour melted butter into the bottom of a 9x13 inch baking dish, swirling to coat the base.
  3. In a mixing bowl, whisk together flour, 1 cup sugar, baking powder, and 1/2 tsp salt. Stir in the milk until just combined.
  4. Pour the batter over the melted butter in the baking dish without stirring. Spoon the prepared peach mixture evenly over the top of the batter.
  5. Bake for 45 minutes until the batter rises around the fruit and turns deep mahogany-brown.
