Ingredients:
- 4 cups fresh peaches, peeled and sliced
- 1/2 cup granulated sugar
- 1 tbsp lemon juice
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup whole milk
- 1/2 cup unsalted butter, melted
Instructions:
- Blanch peaches in boiling water for 30 seconds, peel, and slice into 1/2 inch wedges. Toss slices with 1/2 cup sugar, lemon juice, cinnamon, and 1/4 tsp salt; let sit for 10 minutes.
- Preheat oven to 350°F (175°C). Pour melted butter into the bottom of a 9x13 inch baking dish, swirling to coat the base.
- In a mixing bowl, whisk together flour, 1 cup sugar, baking powder, and 1/2 tsp salt. Stir in the milk until just combined.
- Pour the batter over the melted butter in the baking dish without stirring. Spoon the prepared peach mixture evenly over the top of the batter.
- Bake for 45 minutes until the batter rises around the fruit and turns deep mahogany-brown.
