Ingredients:

  • 1 lb lean ground breakfast sausage
  • 12 slices thick-cut Texas Toast
  • 2 cups sharp cheddar cheese, shredded
  • 1/2 cup green onions, thinly sliced
  • 8 large eggs
  • 2 cups 2% milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika

Instructions:

  1. Brown the lean sausage in a skillet over medium-high heat until no pink remains, then drain the excess fat thoroughly using a paper towel-lined plate.
  2. Grease a 9x13 inch baking dish with olive oil spray. Scatter cubed Texas toast evenly across the bottom, then layer the browned sausage, shredded cheddar cheese, and sliced green onions on top.
  3. In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, and smoked paprika until uniform. Pour the mixture evenly over the bread and cheese, pressing down with a spatula to ensure all bread is submerged.
  4. Cover the dish with foil and refrigerate for at least 4 hours or overnight to allow the bread to hydrate.
  5. Preheat oven to 350°F (175°C). Remove foil and bake for 30–35 minutes until the top is golden brown and the center is set.
