Ingredients:

  • 2 cups (240g) Korean glutinous rice flour
  • 1/2 cup (120ml) warm water
  • 1/2 tsp (3g) fine sea salt

Instructions:

  1. In a large mixing bowl, whisk together the rice flour and salt.
  2. Slowly incorporate the warm water, stirring with a spoon until the dough forms a soft, tacky ball.
  3. Line a steamer basket with parchment paper or a damp cloth to prevent sticking.
  4. Place the dough in the center and flatten it into a disc about 1 inch (2.5cm) thick.
  5. Steam over boiling water for 15–20 minutes until the cake looks translucent and glossy, and a toothpick inserted into the center comes out clean.
  6. Transfer the hot dough to a clean surface dusted with a small amount of rice flour.
  7. While the dough is still hot, knead it vigorously for 3–5 minutes using the heel of your hand until it transforms into a smooth, elastic mass.
  8. Roll the dough into long cylinders (Garaetteok style).
