Ingredients:
- 4 tbsp unsalted butter
- 10 oz mini marshmallows
- 6 cups rice krispies
- 1/2 cup yellow or white cake mix
- 1 tsp vanilla extract
- 1/4 cup rainbow sprinkles
Instructions:
- Place the dry cake mix in a microwave-safe bowl. Microwave on high in 30-second intervals, stirring in between, until the mix reaches 160°F (71°C) or smells slightly toasted. Set aside.
- Melt the butter over low heat in a pot. Once bubbling, add the marshmallows and stir constantly with a rubber spatula until the mixture is smooth and glossy. Remove from heat immediately.
- Quickly stir in the vanilla extract and the heat-treated cake mix. Once integrated, fold in the rice krispies and rainbow sprinkles, stirring gently until the cereal is evenly coated.
- Line an 8x8 inch baking pan with parchment paper. Transfer the mixture to the pan and press down lightly with a greased spatula.
- Allow the treats to cool for 30 minutes before slicing into 16 squares.
