Ingredients:
- 2 cups (240g) glutinous rice flour
- 3/4 cup (180ml) boiling water
- 1/4 tsp (1.5g) fine sea salt
- 4 tbsp (85g) honey
- 2 tbsp (18g) toasted white sesame seeds
Instructions:
- Combine the glutinous rice flour and salt in a mixing bowl.
- Slowly pour in the boiling water while stirring with a wooden spoon. Once a shaggy dough forms, let it cool for 2 minutes.
- Knead the dough by hand for 5 minutes until the surface is smooth and matte, feeling pliable and non-sticky.
- In a small saucepan over very low heat, gently warm the honey and toasted sesame seeds, stirring until fluid. Remove from heat and let cool slightly.
- Pinch off a small piece of dough (about 1 tbsp) and roll into a ball. Press a thumb into the center to create a well.
- Spoon a small amount of the honey-sesame mixture into the center, pinch the dough shut, and smooth the seams.
- Place cakes on parchment-lined steamer trays, leaving 1 inch of space between them, and steam.
